APPLE & CINNAMON OAT COOKIES

So I was sitting in the living room surrounded by all my cookbooks as any normal 20 year old would do, drooling over all the recipes when I though to my self 'hold up now, it's summer and you have to wear a bikini, all these recipes have already given you a bit of a tum'. Obviously giving up baking wasn't going to be a choice so I decided to give up my high calorie baking and try something a but more low cal. After doing some research I can up with a recipe for these apple and cinnamon oat cookies. They are super soft and tasty. They don't look particularly appetising, but they are low calorie and taste really good, what more coul a girl watching her weight want.

Makes 24
Takes 10-15 minutes to cook
Come in at around 110 calories a cookie

 INGREDIENTS
125g Oats
150g Self raising flour
200g Soft light brown sugar
100g unsalted butter
1 egg
2 apples
2 tsp cinnamon
1tsp Vanilla extract
1tbsp runny honey
milk may be needed
Pinch of salt




 METHOD

1. First preheat you oven to gas mark 5 (190C/375F) and make sure your butter and egg are at room temperature.
 
2. Peel and core your apples and grate them thinly, it will basically just look like mushy apple.

 3. Put your sugar and butter in a bowl and mix together using an eletric whisk until nice and creamy. Then add your honey, egg and vanilla. Whisk together until the mixture is lovely and smooth.

 4. Now add your oats and sive in your flour, cinnamon and salt. Mix until combined.

 5. Finally add the apple until mixed well. If your mixture is a little thick then add a dash of milk, if to runny add some self-raising flour.

 6. Take out some of the mixture and roll in into balls, place them on baking paper so they don't stick and ensure there is enough room for them to spread. Cook for 10-15 minutes.

 7. Remove when they look a little brown and undercooked. They may not look done but when removed they will continue to cook and harden when cooled.


And there you have it, some simple, yummy, low calorie treats perfect for nibbling. When I did this recipe I was worried that them being low calorie would mean they tasted disgusting but I was very impressed with the turn out. Success! Try the recipe and let me know what you think.
