SIMPLE VEGETABLE SOUP

I know it's odd to eat soup in the middle of a heatwave but I was really craving it and I had so many vegetable that were going to waste that I though why not, being a student I can't waste food! The good thing about this soup is that it can be frozen, so I could make a HUGE batch and just stick it in the freezer till I want it. It is also so quick and easy to make, there isn't really a recipe as you can use any vegetables that you have going spare but these are my guidelines.
 
Makes as much as you want!
Takes around an hour to cook.

INGREDIENTS

Any vegetables that you have going spare
Two stock cubes
Salt (to taste)
Pepper (to taste)
Garlic (to taste)

METHOD

 1. Peel and chop your vegetables until they are all similar sizes, this ensures that they are cooked around the same time. Even though it looks like a lot of veg take into consideration that we will be mashing it so it will be less.
 2. Place all your veg in a soup pan or a saucepan, it doesn't really matter but it's important that it has a lid otherwise your soup will take forever to cook.
 3. Add your stock cubes, garlic, salt and pepper. Now add boiling water, stop just before it reaches the top of the veg. Turn on the stove to the highest temperature and allow to boil. once boiling turn down the heat to simmer. Put on the lid and leave for 30 minutes. Constantly check and stir.

4. Check the veg is cooked by stabbing it with a knife, if the knife cuts through the veg then it's cooked. Now it's time for the fun part. Grab your masher and go crazy! Depending on the consistency you want of course. Now I won't lie it does look disgusting, but this is messy kitchen and presentation isn't everything, as it tastes amazing!

There you have it, some yummy vegetable soup, filling, low in calories and super easy. What more could you want? If you fancy creaming it up add some creme fraiche, or if you are looking for more of a broth just don't mash it. Try with some crispy homemade bread.
