BAKED DOUGHNUTS


I love doughnuts, but I hate deep frying things in oil so I decided to look into baking doughnuts. The only difference is that they take forever to make which when you have a sugar craving seems like an eternity. But doughnuts are worth the wait! This week I've been sorting everything out so I'm ready to go back to university, this means that I'm going to have a lot going on with studying, baking and attempting to have a social life, I also need to start looking for a job so that I can start saving to eventually open 'the messy kitchen' as a cafe. STRESS!

DOUGHNUTS

INGREDIENTS
230g plain flour
1.5 tbsp unsalted butter
1/4 cup casting sugar
1/3 cup warm milk
pinch of baking soda
1 1/2 tsp vanilla extract
1/4 tsp salt
4 tbsp plain yogurt
2/3 Yeast


METHOD
Makes 6
Takes 15 minutes to bake
Around 2-3 hours for whole process

 
 1. Mix together your yogurt and bicarbonate of soda and leave to the side.
 2. Sift together your plain flour, casting sugar, salt and yeast together in a bowl.
 3. In a separate bowl mix together your milk, vanilla and butter and place in the microwave for 30 seconds or until the butter is melted.
 4. Put your milk mixture into your flour and mix through,
 5. Add your yogurt mixture to the dough mixture and mix together to form a dough, if to runny add flour if to crumbly add milk.
 6. Turn onto a floured surface and knead like crazy! Just get angry with it and throw it around.
 7. Knead for 10 minutes until soft and elastic, place in a lightly oiled bowl and cover with clingfilm for around an hour.
 8. Remove when doubled in size.
 9. Roll out and using a large circle (cup) and a small circle (icing nozzle) make a doughnut shape. Lay on a baking sheet and cover with a tea towel for 45 minutes until they rise up.
 
10. Brush with melted butter and place in the middle of the oven for 20-25 minutes on gas mark 4 (180C/350F) until golden on top.
 11. They should look this color, leave to cool and move onto your frosting.
 CHOCOLATE GLAZE


INGREDIENT
165g icing sugar
60g cocoa powder
pinch of salt
3 tbsp milk
1 tbsp vanilla

1. Place all your ingredients in a bowl.
 2. Whisk together to form a chocolate glaze, it should be glossy and thick.

3. Dunk your doughnut in the chocolate so they are coated on top.
4. Decorate with sprinkles and leave for the chocolate glaze to set and there you have it super yummy baked doughnuts. A lot healthier than fried but taste the same. Give them a go and let me know what you think :)
