Reduced fat chocolate chip cookies

Trying to get that perfect beach body when your kitchen is full of treats is difficult, and with a craving for cookies it can becoming impossible. So I decided to come up with a recipe for cookies that were reduced in fat, but had the same sweetness and texture as a full fat cookie.  By reducing the amount of butter used, it drastically reduces the fat! Do remember though that they are still full of sugar and even though they are reduced in fat this does not make them good for you, so no eating them all at once!


INGREDIENTS
 110g rolled oats 
 175g all-purpose flour
1⁄2 teaspoon baking soda 
pinch of salt
58ml extra-light olive oil
3 tablespoons unsalted butter
50g casting sugar
40g light brown sugar
1 large egg
1 large egg white
1 1⁄2 teaspoons vanilla extract
200g chocolate chunks



METHOD
Makes 30
Takes 30 minutes + 30 minutes chilling

1. Preheat your oven to Gas mark 4 (180C/350°F) Toast your oats for 5 minutes.
2. Beat together your oil, butter, and sugars, then add your egg, egg white, and vanilla.
3. Add your flour, baking soda, salt, oats, and chocolate chunks.
4. Refrigerate dough for 30 minutes.
5. Place a small ball of dough onto the baking sheet leaving a gap between each, remember they spread. Bake 10 to 15 minutes until they are golden, they should still be soft as they harden when cooled.
