Cinnamon baked doughnuts


I've had such a rough first week back in work that I needed cheering up, the one thing that helps me to do this is baking. So with my cupboards being empty I ran to Tesco to get some supplies. I love baked doughnuts as they are so quick to make, and once you have a basic recipe you can adapt it to suit all flavour combinations.




I love the taste of cinnamon, not only does it remind me of Christmas (which i've already started preparing for), but it's also such a good flavour of doughnut! I decided to add some chocolate chips to the mixture just because who doesn't love chocolate.


 MAKES 18
 You will need a doughnut pan

INGREDIENTS
400g plain flour
115g  Caster sugar
60g brown sugar
55g unsalted butter
50ml vegetable oil
2 eggs
250ml milk
1 1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp nutmeg
1/2 tsp cinnamon
1tsp Vanilla extract
pinch of salt

Sugar glaze
100g caster sugar
2 tbsp cinnamon
50g butter

METHOD 

  1. Preheat your oven to Gas mark 6 (200C/400F) and grease your tin with butter to avoid sticking.
  2. Beat together your butter, and both sugars until creamed together.
  3. Add your oil and eggs and mix.
  4. Add your baking powder, baking soda, nutmeg, cinnamon, salt and vanilla extract and mix.
  5. Add your flour and milk and mix.
  6. Add your chocolate chip and mix.
  7. Using a piping bag or a spoon add your batter to the tin filling to just below the top. 
  8. Place in the oven for 10 minutes once cooked remove and allow to cool for 10 minutes. 
  9. Remove from the tin and place to the side. The repeat the process again with the rest of the batter.
  10. Once all the doughnuts are cooled, start making your sugar glaze. 
  11. Melt your butter and put to the side.
  12. Mix together your cinnamon and sugar until combined. 
  13. Take a doughnut and dip on side in the butter and then into the sugar. Then repeat on the other side of the doughnut.
